Ricki's Rolls (thats my mom)

Mom's Rolls

7 cups flour
1 1/2 Tb active dry yeast
2 1/2 cups milk
1/2 cup sugar
1/2 cup shortening (or butter)
2 teas salt
2 eggs

Put 2 cups flour in bowl with yeast in center. Heat the milk, sugar, butter, salt in saucepan over low heat. When sugar is dissolved and butter is almost all melted (not too hot, not too cold) pour into flour and yeast. Add 2 eggs. Mix with mixer for about 2 minutes. Then add rest of flour and knead on floured surface. Put in greased bowl and cover with light towel. Let rise. (I usually make the dough in the morning and let the dough rise all day. Punching it down 1 or 2 times). About 1 hour before cooking, form into balls and place on greased cookie sheet. Let rise until almost doubled in size. Bake at 375 for 18-20 min.

It took some practice for me.......but I'm sure all of you expertise bakers... will be just fine!!!
